- Rinse the bamboo cutting board with hot water right after you use it, and add a bit of natural dishwashing liquid. Scrub both the front and back, then rinse with hot water.

- If you cut chicken, fish, or meat, you’ll want to sterilize your board after washing. Use 1 tbsp. of bleach for every 1 gallon of water, then rinse again with plain hot water. (as recommended by the FDA)

- Dry the board immediately with a clean dish towel.

- To keep your bamboo cutting board in good shape (so it doesn’t dry out and crack) it should be conditioned at least once a week. A quick wiping with food-grade mineral oil using a clean cloth works great. Remove the excess oil with a clean cloth in the morning. Rinse with warm water before using.
